Baked Sweet Potato

Normal baked potatoes can be a bit boring, so why not swap your standard baked potato for a baked sweet potato?

They take around about the same time to prepare and bake as a normal potato, but they taste so much better! The sweet potato tends to be be smooth and sweet, and the skin crispy.

I used to love having a dollop of sour cream and chives as the filling in my baked sweet potato, but I can’t have sour cream anymore due to being lactose intolerant. However, you can use any filling you’d normally use in a normal baked potato. These days I tend to go for baked sweet potato with baked beans and grated Lactofree cheese.

It’s such an easy but tasty meal. Yum!

Sweet potatoes are a great replacement for normal potatoes. I love to have sweet potato chips as a change, and roasted sweet potatoes make a delicious addition to any roast dinner.

    I could eat a jacket potato as a meal every day of the week, although hubbie isn’t very keen on them and they wouldn’t constitute a meal in his eyes, so I very rarely get to have them.

    I’m not fussy what filling they come with, although cheese and baked beans are probably my favourite, just so long as the skin is nice and crispy – oven cooked not microwaved for me, every time!

    I do like sweet potatoes anyway, so this is a great idea to ring the changes and try out a new flavour. Thanks for the recommendation 🙂

    I love potatoes and eat them often, prepared in a variety of ways – even with my plant based diet (meaning no butter, bacon, sour cream, or cheese).

    I’ve grown to love sweet potatoes, too, often using them in stews and soups. I also love them sliced up and roasted in the oven, sprinkled with a bit of garlic salt, cinnamon, and allspice.

    I’ve never thought of putting beans on a potato. It looks quite tasty!

    I love beans and cheese in a baked potato. I’m not particularly fond of sweet potato, perhaps I’d enjoy it baked though, I’ve never tried it this way.

    I feel rather ashamed to admit this, but I’ve never tried sweet potato! I often look at them in the supermarket but then gravitate towards the King Edwards. I’m going to give them a try now, thank you.

    Ah, this looks sooo good! Definitely going to try it out! And with the Lactofree cheese. I have a lactose intolerance too so going to put the cheese on my next shop!

      I recommend the Lactofree Mature Cheddar Cheese as it’s got more taste to it than the standard Lactofree Cheese. Enjoy 🙂
